Spiced Lentils

  • 1 cup split red lentils
  • 3 cups chicken bone broth (optional to use water or vegetable broth)
  • 2 cloves of garlic, peeled and sliced
  • The Savories
  • The Chiles
  • salt
  • olive oil
  • yogurt and fresh herbs to garnish

  1. Heat a few tablespoons of olive oil in a small pot over medium-low heat.
  2. Add in the sliced garlic and cook for a few minutes until fragrant but not burnt.
  3. Add in 1 cup of lentils, and toast briefly in the oil. Add in a pinch of salt and stir.
  4. Pour in 3 cups of chicken bone broth, increase heat, and briefly bring to a boil.
  5. As soon as it boils, reduce the heat to a simmer.
  6. Cook for about 10 min, stirring occasionally, until much of then broth is absorbed.
  7. Add in 2tbsp each of The Savories and The Chiles. Stir, and continue cooking.
  8. Taste the lentils, salt if needed, and add more spices as desired.
  9. Continue cooking for a few minutes until your desired consistency is reached. For firmer lentils, cook for less time. For creamier, soupier lentils, cook for a few extra minutes.
  10. Serve with fresh herbs and a dollop of yogurt for an excellent side dish!
  11. Enjoy!
